Have you heard of the All-American prophet?

No, God’s favorite prophet was All-American!
Unlike the sugar cookies I blogged about yesterday, these are super easy. I wanted to create a fun dessert for the All-American prophet, and what’s more All-American than apple pie! Except, pies are hard – I wanted something easier. So, how about mini apple pies/cookies with a very patriotic chocolate drizzle? I followed Bakerella’s directions for apple pie pops, without the pesky pop part. Feel free to make any of the ingredients from scratch, if you like.
- Pre-made frozen pie crust (in sheets, NOT in a pan). Mine was from Trader Joes.
- Apple pie filling, with the apple slices cut into small pieces
- 1 egg
- Granulated sugar
- Red, white, and blue candy melts (you can find these at a Jo-Ann’s, Michael’s, and maybe even Wal-Mart)
- Cookie cutters in your desired shapes
1. Follow the directions to defrost your pie crust. Mine needed to sit in the fridge overnight, so plan ahead! Preheat your oven to 375 degrees.
2. Place the pie crust on a floured surface and cut out your desired shapes.
For me, one pie crust made 7 apple pie cookies without re-rolling the dough.
3. Line a baking sheet with parchment paper. For each cookie, place one piece of dough on the baking sheet. Add a small amount of apple pie filling in the middle, making sure there is a little room around the edges to seal the dough.
Take another piece of dough in the corresponding shape and place it on top, gently pressing the edges together. Use a fork to make a decorative edge.
4. Separate the egg white into a small bowl. Using a pastry brush, lightly brush the tops of the cookies with the egg white. Sprinkle the tops with the sugar.
5. Bake for 13-16 minutes, or until tops are lightly browned.
6. Once the cookies are cooled, drizzle with red, white, and blue candy melts.
