Snickerdoodle Scones at www.notyourmommascookie.com

If I had a name for this story, it would be “the one where everyone thought I had cancer.”

I mentioned before that I was admitted to the hospital a couple weeks ago for a suspected pulmonary embolism. Luckily, everything was peachy, but my heart rate was being all weird, so they decided to keep me overnight for observation. They were going to put me with all of the other pregnant ladies, which would have been awesome – kind of like a dress rehearsal for labor. Unfortunately, they didn’t have any beds available, so they had to put me in oncology. No biggie – I didn’t mind. I just wanted to get in a more comfortable bed! (ER beds are kind of sucky) Plus, the nurses there were super awesome. 

So, the next day, my husband and I are impatiently waiting for me to be discharged. Suddenly, there is a knock at the door and a lady I didn’t recognize walks in.

This was normal, lots of people had stopped by other than my nurses.

She introduces herself as the chaplain of the hospital. Ruh roh. Was there something the doctors weren’t telling me?

Oh yeah, I’m in oncology. I assume that’s why she is there. I’m debating saying something, but then she asks if we would like daily bread or to do a prayer.

Ohhhh, ok. Maybe they do this for everyone?  We politely decline and she asks us if we have any children.

I get a huge grin on my face and declare that we just have one in here, i.e. my belleh.

Suddenly, her face changes. She sits next to me on the bed. Then…it hits me.

OMG, not only does she think that I have cancer, but that I’m pregnant with cancer. I’m feeling paralyzed by my own stupidity and I don’t even know what to say now. She starts telling me that “God will give the doctors the answers.”

I couldn’t feel like more of a jerk/weirdo. I’m just smiling, nodding, and trying to be as polite as possible. At that point, it felt more awkward to say, “Oh sorry, I don’t actually have cancer.” I was trying to be as nice as possible until she left so I could die of embarrassment alone.

Then, some sweet older ladies stopped by and asked if we wanted a therapy dog (!!!) to come by later that evening. Again, not wanting to start every reply with, “Oh, I don’t have cancer,” I just thanked them, and said that I would be discharged by then. I thought there were going to throw me a little party in there.

“Oh, that’s so wonderful.”

“We’re so happy for you!”

***insert bright red, sad face here***

This story has nothing to do with scones, but hopefully you had a laugh at my expense. Now, go bake something!

These scones are really fabulous. They are quite sweet and the texture is a bit different than traditional scones (for a more traditional recipe, check out these). And, who doesn’t love snickerdoodles!?

 

Snickerdoodle Scones

Ingredients
  • [b]Scone[/b]
  • 2 cups flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup cold, unsalted butter, cut into small cubes
  • ½ cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2/3 cup cinnamon chips
  • [b]Glaze[/b]
  • 1 1/2 cups powdered sugar
  • 3 tablespoons milk
  • 1/2 teaspoon cinnamon
Instructions
  1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. Cut in the cold butter pieces with a pastry cutter, until mixture resembles coarse meal.
  3. In a glass measuring cup, measure 1/2 cup milk. Add egg and vanilla extract to measuring cup and whisk together until combined. Pour egg mixture over flour mixture. Using a fork, gently mix until there is no visible flour. Gently stir in cinnamon chips. Mixture will be sticky.
  4. On a well-floured surface, knead mixture a couple times. Use a pizza cutter to cut dough into 12 triangles or squares. Place scones on baking sheet.
  5. Bake for 8 minutes until lightly brown.
  6. Glaze: Whisk together glaze ingredients. Place glaze in a plastic baggie and snip off one of the corners. Drizzle glaze over the cooled scones.
